Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1/2 cup sour cream

1/2 cup key lime juice (freshly squeezed preferred)

Zest of 2 key limes

1 teaspoon vanilla extract

Whipped cream, for topping

Key lime slices and lime zest, for garnish

Instructions

Make the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well until the crumbs are fully coated. Divide the mixture evenly among serving cups, pressing it down firmly to form a base.

Prepare the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar, mixing until fully incorporated.

Add the Other Ingredients: Add the sour cream, key lime juice, lime zest, and vanilla extract to the cream cheese mixture. Beat until the mixture is smooth and well-combined, scraping down the sides of the bowl as necessary.

Assemble the Cups: Spoon or pipe the cheesecake filling over the crust in each cup, filling them until just below the rim. Use a spatula to smooth the tops if desired.

Chill: Refrigerate the cheesecake cups for at least 4 hours, or until set. This allows the flavors to meld and the filling to firm up.

Serve: Just before serving, top each cheesecake cup with a dollop of whipped cream, and garnish with additional key lime slices and a sprinkle of lime zest.
