2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

8 ounces cream cheese, softened

1/2 cup sour cream

Zest of 2 lemons

1/2 cup fresh lemon juice (about 2-3 lemons)

1 pack of graham crackers (about 14-16 full sheets)

Fresh lemon slices and mint leaves for garnish (optional)

Prepare the Cream Mixture: In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add in the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

    Mix the Cheese Filling: In another bowl, beat the softened cream cheese until smooth, then add the sour cream, lemon zest, and lemon juice. Mix well until fully combined and creamy.

      Combine MCream: Gently fold the whipped cream into the lemon cream mixture, being careful not to deflate the whipped cream. Mix until no streaks remain, resulting in a light and airy filling.

        Assemble the Cake: In a rectangular dish (9x13 works well), spread a thin layer of the lemon filling on the bottom. Place a layer of graham crackers on top, breaking them if necessary, to create a full layer. Repeat this process: more filling, then more graham crackers, until the ingredients are used up, ending with a final layer of lemon filling.

          Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. This allows the graham crackers to soften and absorb the flavors.
