Ingredients

1 1/2 cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

2 (14-ounce) cans sweetened condensed milk

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 tablespoon lemon zest

1 teaspoon vanilla extract

1/2 teaspoon salt

Whipped cream, for topping

Lemon slices and additional lemon zest, for garnish

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the Crust: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish to form an even crust. Use the back of a measuring cup to help pack it tightly. Place the crust in the refrigerator to chill for about 30 minutes.

Create the Filling: In a large mixing bowl, whisk together the sweetened condensed milk, freshly squeezed lemon juice, lemon zest, vanilla extract, and salt until smooth and creamy. Make sure all ingredients are well incorporated.

Assemble the Pie: Remove the chilled crust from the refrigerator. Pour the lemon filling into the crust, smoothing it out with a spatula. Cover the pie with plastic wrap or foil and place it back in the refrigerator.

Chill: Allow the pie to chill in the refrigerator for at least 4 hours, or overnight for a firmer texture.

Serve: Once chilled, slice the pie and top each slice with a dollop of whipped cream. Garnish with lemon slices and a sprinkle of lemon zest for an extra pop of flavor.

Enjoy: Serve cold and enjoy the refreshing taste of this deliciously tangy no-bake lemon icebox pie!
