24 Oreo cookies (plus more for topping)

5 tablespoons unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy cream (whipped to soft peaks)

Pinch of salt

Prepare the crust: In a food processor, crush the 24 Oreo cookies into fine crumbs. Add the melted butter and pulse until combined. The mixture should resemble wet sand.

    Form the base: Press the crumb mixture evenly into the bottom of a 9x9-inch (or similar sized) baking dish. Use a flat-bottomed measuring cup or your fingers to pack it tightly. Place in the freezer to set while you prepare the filling.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar, mixing until fully combined.

        Add vanilla and salt: Stir in the vanilla extract and a pinch of salt to enhance the flavors.

          Incorporate the whipped cream: Gently fold the whipped cream into the cream cheese mixture in batches. Make sure to do this carefully to keep the mixture light and airy.

            Mix in crushed Oreos: Roughly crush a few additional Oreo cookies and fold them into the cheesecake mixture for added texture.

              Assemble the bars: Remove the crust from the freezer. Pour the cheesecake filling over the Oreo crust, smoothing it out evenly with a spatula.

                Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, leave it in the fridge overnight.

                  Serve: Once set, lift the cheesecake out of the baking dish using the edges of the parchment paper (if you used it), slice it into bars, and top with extra crushed Oreos and a drizzle of chocolate if desired.
