1 cup rolled oats

½ cup almond butter (or any nut/seed butter of choice)

½ cup dried peaches, finely chopped

¼ cup honey or maple syrup

½ teaspoon vanilla extract

¼ teaspoon ground cinnamon

⅓ cup protein powder (optional)

¼ cup chia seeds or flaxseeds

A pinch of salt

Additional shredded coconut or crushed nuts for rolling (optional)

Instructions
 

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped dried peaches, protein powder (if using), chia seeds/flaxseeds, ground cinnamon, and a pinch of salt. Stir until well combined.

    Add Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.

      Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir thoroughly until everything is well incorporated and the mixture is sticky enough to hold together.

        Chill the Mixture: Place the mixture in the fridge for about 30 minutes to firm up. This step makes it easier to roll the bites into balls.

          Shape the Energy Bites: Once the mixture is chilled, remove it from the fridge and use your hands to roll small amounts of the mixture into bite-sized balls (about 1 inch in diameter). If desired, roll the balls in shredded coconut or crushed nuts to coat.

            Store: Place the energy bites in an airtight container. You can store them in the fridge for up to one week or freeze them for longer storage.
