1 cup rolled oats

½ cup natural peanut butter

¼ cup honey or maple syrup

¼ cup mini chocolate chips

¼ cup ground flaxseed

½ teaspoon vanilla extract

A pinch of salt

Instructions
 

In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir until well mixed.

    Add the natural peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.

      Using a spatula or your hands, mix everything together until well combined and sticky. If the mixture is too dry, you can add a splash of water or an extra tablespoon of peanut butter.

        Fold in the mini chocolate chips evenly throughout the mixture.

          Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. Place each ball on a baking sheet lined with parchment paper.

            Once all the mixture is rolled into balls, place the baking sheet in the refrigerator for about 30 minutes to firm up the energy balls.

              After chilling, enjoy right away or store them in an airtight container in the fridge for up to a week.
