Ingredients

1 cup fresh raspberries (plus extra for garnish)

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup cream cheese, softened

1/2 cup powdered sugar

Zest of 1 large lemon

1/4 cup fresh lemon juice

1 teaspoon gelatin (optional, for thickening, or 1 tablespoon agar-agar for a vegan option)

1 cup crushed graham crackers or digestive biscuits

1/4 cup unsalted butter, melted (or coconut oil for a vegan option)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Raspberry Layer:

    - In a small bowl, combine the fresh raspberries, honey (or maple syrup), and vanilla extract. Gently mash the raspberries with a fork until slightly pureed but still chunky. Set aside.

      Make the Cream Cheese Mixture:

        - In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing well to combine.

          - Stir in the lemon zest and lemon juice, blending until the mixture is well incorporated.

            Whip the Heavy Cream:

              - In another bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until combined. Be gentle to maintain the airy texture.

                Optional Gelatin Step (if using):

                  - If you'd like a firmer texture, sprinkle the gelatin over 2 tablespoons of cold water in a small bowl and let it bloom for 5 minutes. Gently heat the mixture until the gelatin dissolves, and then fold it into the cream cheese mixture.

                    Prepare the Crust:

                      - In a separate bowl, combine the crushed graham crackers and melted butter (or coconut oil) until well mixed. Press this mixture into the bottom of individual cups or glasses to form a crust.

                        Assemble the Cups:

                          - Spoon a layer of the raspberry mixture over the crust in each cup, followed by a generous layer of the lemon cream mixture. Repeat the layers until the cups are full, finishing with the lemon cream at the top.

                            Chill:

                              - Cover the cups with plastic wrap or airtight lids and refrigerate for at least 2-4 hours, or until set. For best results, chill overnight.

                                Garnish and Serve:

                                  - Before serving, garnish each cup with a few fresh raspberries and some mint leaves for an added touch of freshness.
