1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, hulled and sliced

2 tablespoons strawberry jam (optional for topping)

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined. Press the mixture firmly into the bottom of a 9x9-inch baking dish to form an even layer. Place it in the refrigerator to set while preparing the filling.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar, continuing to mix until well incorporated. Stir in the vanilla extract.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream. This will give the cheesecake bars a light and fluffy texture.
