Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups fresh strawberries, hulled and sliced

2 tablespoons lemon juice

Extra strawberries and mint leaves for garnish

Instructions

Prepare the Crust:

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and resembles wet sand.

      Layer Crust in Cups:

Take small dessert cups (4-6 oz size) and evenly distribute the crust mixture at the bottom of each cup. Press down lightly to form a firm layer. Set aside.

          Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.

              Whip the Cream:

In a separate bowl, whip the heavy cream on medium-high speed until stiff peaks form. This usually takes around 3-5 minutes.

                  Combine Mixtures:

Gently fold the whipped cream into the cream cheese mixture using a silicone spatula. Be careful not to deflate the whipped cream, ensuring a light and airy texture.

                      Add Strawberries:

In another bowl, toss the sliced strawberries with lemon juice. Fold half of the strawberries into the cheesecake mixture for added flavor and texture.

                          Fill the Cups:

Spoon the cheesecake filling into the prepared dessert cups over the crust layers, filling them to about ¾ full. Use a spatula to smooth the tops if needed.

                              Chill:

Cover the cups with plastic wrap and refrigerate for at least 4 hours, or overnight if time allows, to set properly.

                                  Serve:

Before serving, top each cheesecake cup with remaining sliced strawberries and add a mint leaf as a garnish for an elegant touch.

                                      Enjoy:

Dig in with a spoon, savoring the delicious layers of graham cracker crust, creamy cheesecake, and fresh strawberries.
