1 cup rolled oats

1/2 cup natural peanut butter (or almond butter)

1/3 cup honey (or maple syrup for a vegan option)

1/2 cup unsweetened shredded coconut

1/4 cup mini chocolate chips (dark or semi-sweet)

1/4 cup flaxseed meal (or ground chia seeds)

1 tsp vanilla extract

1/4 tsp sea salt

Optional: 1/4 cup chopped nuts (such as almonds or walnuts)

Optional: 1/4 cup dried fruit (such as cranberries or raisins)

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, flaxseed meal, sea salt, and optional dried fruit and nuts. Mix well so that everything is evenly distributed.

    Mix Wet Ingredients: In a separate bowl, mix the peanut butter, honey, and vanilla extract until smooth. If your peanut butter is too thick, you can slightly warm it in the microwave (about 15-20 seconds) to make it easier to mix.

      Combine Everything: Pour the wet mixture into the dry ingredients. Stir with a spatula or spoon until all ingredients are nicely combined. The mixture should be sticky and hold together when pressed. If it seems too crumbly, you can add a little more peanut butter or honey.

        Add Chocolate Chips: Gently fold in the mini chocolate chips until evenly mixed throughout the energy bite mixture.

          Shape the Bites: Using your hands, roll the mixture into small balls (about 1 inch in diameter). Place each ball on a baking sheet or plate lined with parchment paper.

            Chill: Once all the energy bites are formed, place them in the refrigerator for at least 30 minutes to firm up.

              Store or Serve: After chilling, enjoy immediately or transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to 1 week or in the freezer for up to 3 months.
