1 pound Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, chopped

1 medium red onion, sliced thin

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional for heat)

½ cup grated Parmesan cheese

2 tablespoons balsamic vinegar

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Bacon: In a large oven-safe skillet or baking pan, add the chopped bacon. Cook on medium heat for about 5-7 minutes or until the bacon is crispy. Use a slotted spoon to remove the bacon and set it aside on a paper towel to absorb excess grease. Leave about 1 tablespoon of bacon grease in the pan.

      Sauté Veggies: Add the sliced red onion to the skillet and cook for 3-4 minutes until slightly softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Combine Brussels Sprouts: Add the halved Brussels sprouts to the skillet, along with the olive oil, salt, black pepper, smoked paprika, and red pepper flakes (if using). Toss well to coat the Brussels sprouts in the bacon grease and seasonings.

          Bake: Spread the mixture evenly in the pan. Bake in the preheated oven for 20 minutes.

            Add Bacon & Cheese: After 20 minutes, remove the skillet from the oven. Stir in the crispy bacon and sprinkle the grated Parmesan cheese over the top. Drizzle the balsamic vinegar evenly over everything.

              Final Bake: Return the skillet to the oven and bake for an additional 10-15 minutes until the Brussels sprouts are tender and the cheese is bubbly and golden.

                Garnish & Serve: Remove from the oven, garnish with chopped fresh parsley if desired, and serve warm as a delicious side dish or a hearty main.
