One-Pan Cajun Shrimp and Rice Skillet

1 lb (450g) large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 tablespoon Cajun seasoning

1 medium onion, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

1 cup canned diced tomatoes (with juices)

1 cup corn (frozen or fresh)

2 tablespoons olive oil

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Juice of half a lemon

Sauté the Aromatics: In a large skillet over medium heat, heat the olive oil. Add the diced onion and bell pepper. Sauté for about 3-4 minutes or until the vegetables are soft.

    Add Garlic and Tomato: Stir in the minced garlic and cook for another 1 minute until fragrant. Then add the diced tomatoes (with juices) into the skillet, stirring to combine well.

      Season the Shrimp: Sprinkle in the Cajun seasoning, then add the shrimp. Toss the shrimp in the mix so they are coated with the spices. Cook for about 2-3 minutes, just until the shrimp begin to turn pink.

        Add Rice and Broth: Stir in the rice, corn, and chicken broth. Mix everything well and bring the mixture to a boil.

          Simmer: Once boiling, lower the heat to a simmer and cover the skillet with a lid. Let it cook for about 15-18 minutes, or until the rice has absorbed most of the liquid and is tender.

            Finish it Up: Once the rice is cooked, remove the skillet from heat. Squeeze the lemon juice over the top, and add salt and pepper to taste. Fluff the rice with a fork and gently fold in the shrimp.
