Ingredients

1 lb (450g) ground beef

4 cups fresh broccoli florets

1 cup uncooked brown rice

2 cups beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil

½ cup sour cream (optional for creamy texture)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Beef: In a large oven-safe skillet or pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they are translucent (about 3-4 minutes). Pour in the ground beef, breaking it apart with a spatula, and cook until browned and cooked through (about 5-7 minutes). Season with smoked paprika, oregano, salt, and pepper.

Add Rice and Broth: Stir in the uncooked brown rice and beef broth. Bring the mixture to a gentle boil, then reduce the heat to low, covering the pan and letting it simmer for 10 minutes. This will allow the rice to soak up some of that delicious beef flavor.

Incorporate Broccoli: After 10 minutes, stir in the fresh broccoli florets. If you're using sour cream for added creaminess, mix it in at this stage. Ensure everything is well combined.

Cheese it Up: Remove the skillet from the heat. Sprinkle the shredded cheddar and mozzarella cheese generously over the top of the beef and broccoli mixture.

Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the rice is tender.

Serve: Let it cool for a few minutes before serving. Garnish with fresh herbs if desired, and enjoy your hearty one-pan meal!
