1 pound ground beef

1 cup uncooked long-grain white rice

1 can (14.5 oz) diced tomatoes, undrained

1 medium onion, chopped

2 cloves garlic, minced

2 cups beef broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups shredded cheddar cheese

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    Heat olive oil in a large, oven-safe skillet over medium heat. Add the chopped onion and garlic, sautéing until tender and fragrant (about 3-4 minutes).

      Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if necessary.

        Stir in the uncooked rice, diced tomatoes, beef broth, mixed vegetables, paprika, Italian seasoning, salt, and pepper. Bring the mixture to a simmer, then cover the skillet with a lid and reduce the heat to low. Let it simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed.

          Remove the skillet from heat. Sprinkle the grated cheddar cheese evenly over the beef and rice mixture.

            Transfer the skillet to the preheated oven and bake uncovered for 10-15 minutes, or until the cheese is melted and bubbly.

              Remove from oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
