1 lb (450g) ground beef

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14 oz) diced tomatoes with green chilies

2 cups beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 tsp paprika

1 tsp cumin

1 tsp dried oregano

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Sauté the beef: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks (about 5 minutes). Drain excess fat if needed.

    Add vegetables: Stir in the diced onion, garlic, and bell pepper. Sauté for another 3-4 minutes until the vegetables are softened.

      Season the mixture: Sprinkle in the paprika, cumin, oregano, salt, and pepper. Stir until everything is well combined.
