Ingredients
  

1 lb ground beef (or ground turkey)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (10 oz) enchilada sauce

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup cooked rice (white or brown)

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

Fresh cilantro for garnish

Sour cream (optional)

Instructions
 

Brown the Beef: In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, for about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Add the diced onion and bell pepper to the skillet. Sauté for another 3-4 minutes until the onion is translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Combine Ingredients: Reduce the heat to medium, and add the black beans, corn, cooked rice, enchilada sauce, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine all the ingredients well.

        Simmer: Allow the mixture to cook for about 5-7 minutes, stirring occasionally, until heated through and flavors meld together.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture. Cover the skillet with a lid and allow the cheese to melt, about 2-3 minutes.

            Serve: Once the cheese is melted and bubbly, remove from heat. Garnish with fresh cilantro and serve with a dollop of sour cream if desired.
