One-Pan Cheesy Vegetable and Chicken Bake

2 boneless, skinless chicken breasts

1 cup broccoli florets

1 cup cherry tomatoes, halved

1 cup zucchini, diced

½ cup bell pepper, diced (any color)

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, paprika, and Italian seasoning. Rub the spices evenly over both sides of the chicken.

      Sauté the Vegetables: In a large oven-safe pan or skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking for about 2 minutes until fragrant. Then, add the broccoli, cherry tomatoes, zucchini, and bell pepper. Sauté for another 5-7 minutes until the vegetables are slightly tender.

        Add the Chicken: Push the sautéed vegetables to the side of the pan and place the seasoned chicken breasts in the center. Allow them to sear for about 3-4 minutes on each side, until they start to brown.

          Combine and Bake: Once the chicken is seared, reduce the heat to low and sprinkle the shredded mozzarella and grated Parmesan over the top of the chicken and vegetables. Transfer the pan to the preheated oven.

            Bake: Bake in the oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F / 75°C) and the cheese is bubbly and golden.
