One-Pan Creamy Chicken and Spinach Skillet

Ingredients
  

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, packed

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Fresh basil, for garnish

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the diced chicken and season with salt and pepper. Cook until golden brown on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

      Add the cherry tomatoes to the skillet and cook for about 3 minutes until they begin to soften and release their juices.

        Stir in the fresh spinach and cook until wilted, about 2 minutes.

          Reduce the heat to medium-low and pour in the heavy cream. Stir to combine with the tomato and spinach mixture.

            Add the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Mix well until the sauce thickens slightly, about 2 minutes. Adjust seasoning as needed.

              Return the cooked chicken to the skillet and toss to coat in the creamy sauce. Allow everything to heat through for an additional 2-3 minutes.

                Remove from heat and garnish with fresh basil before serving.
