4 salmon fillets (about 6 oz each)

2 cups asparagus, trimmed and cut into 2-inch pieces

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

4 tablespoons unsalted butter

3 cloves garlic, minced

Juice of 1 large lemon (about 3 tablespoons)

Zest of 1 large lemon

2 teaspoons dried oregano

2 teaspoons dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: On a large baking sheet, spread the asparagus, cherry tomatoes, and zucchini. Drizzle with a bit of olive oil and season with salt and pepper. Toss to coat evenly.

      Make the Lemon Butter Sauce: In a small saucepan over medium heat, melt the butter. Once melted, add minced garlic and sauté for about 30 seconds or until fragrant. Remove from heat and stir in the lemon juice, lemon zest, oregano, thyme, salt, and pepper.
