1 lb (450g) Italian sausage (sweet or spicy, your preference)

1 lb (450g) baby potatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

4 cloves of garlic, minced

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional for extra heat)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the halved baby potatoes, sliced bell peppers, and onion. Drizzle with olive oil, then sprinkle with oregano, thyme, red pepper flakes, salt, and pepper. Toss everything together until well coated.

      Add the Sausage: Cut the Italian sausage into 1-inch pieces and add them to the bowl with the vegetables.
