2 cups elbow macaroni

1 tablespoon olive oil

1 small onion, diced

2 garlic cloves, minced

4 cups vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup balsamic vinegar

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes or until translucent. Stir in minced garlic and cook for another 1 minute, until fragrant.

    Add Pasta: Pour the uncooked elbow macaroni into the pot and stir to combine with the onion and garlic.

      Combine Liquids: Add vegetable broth, heavy cream, and balsamic vinegar to the pot. Stir in the Italian seasoning, along with salt and pepper to taste.

        Cook Pasta: Bring the mixture to a gentle boil. Once boiling, reduce heat to medium-low, cover, and let simmer for about 8-10 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

          Add Cheeses: Once the pasta is cooked, remove the pot from the heat. Stir in the cheddar cheese, mozzarella, and grated Parmesan until melted and creamy. If the mac and cheese looks too thick, add a splash of vegetable broth or water to reach your desired consistency.
