8 oz elbow macaroni

1 lb ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (14 oz) diced tomatoes with green chilies

2 cups beef broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup corn (frozen or canned)

1 cup black beans (canned, rinsed and drained)

Salt and pepper to taste

Optional toppings: chopped green onions, sour cream, sliced jalapeños, and fresh cilantro

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the ground beef. Cook for about 5 minutes until browned. Drain excess fat if necessary. Add diced onion and minced garlic, sauté for another 3-4 minutes until the onion becomes translucent.

    Add Seasoning and Pasta: Stir in the taco seasoning, ensuring the beef and onions are well coated. Add the elbow macaroni and mix thoroughly.
