One-Pot Lemon Basil Pasta

12 oz spaghetti or linguine

4 cups vegetable broth

1 cup cherry tomatoes, halved

1 small onion, finely chopped

4 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

1/2 cup fresh basil leaves, chopped

Zest of 1 lemon

Juice of 2 lemons

1/2 cup grated Parmesan cheese (optional for serving)

Salt and pepper to taste

2 tbsp olive oil

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook for about 2-3 minutes until it becomes translucent. Add in the minced garlic and red pepper flakes, cooking for another 1-2 minutes until fragrant.

    Add Pasta and Liquid: Stir in the spaghetti (or linguine) and pour in the vegetable broth. Bring to a gentle boil, then reduce to a simmer. Make sure the pasta is submerged in the broth.

      Infuse with Flavor: Add the halved cherry tomatoes, lemon zest, and lemon juice into the pot. Season with salt and pepper to taste.

        Cook the Pasta: Stir everything together. Cook uncovered for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking. Most of the liquid should be absorbed by the pasta during this time.
