One-Pot Taco Rice with Black Beans

1 cup long-grain white rice

1 can (15 oz) black beans, drained and rinsed

1 lb ground beef or turkey

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

2 cups vegetable or chicken broth

2 tbsp taco seasoning (store-bought or homemade)

1 tsp cumin

1 tsp smoked paprika

Salt and pepper, to taste

Olive oil, for sautéing

Fresh cilantro, for garnish

Optional toppings: shredded cheese, avocado, sour cream, lime wedges

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion and bell pepper, cooking for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Push the vegetables to one side of the pot and add the ground beef or turkey. Cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

      Mix in Rice and Spices: Stir in the rice, taco seasoning, cumin, smoked paprika, salt, and pepper. Cook for 1-2 minutes, allowing the rice to soak up some of the flavors.

        Add the Liquids: Pour in the vegetable or chicken broth, diced tomatoes (with their juice), black beans, and corn. Stir everything together, ensuring the rice is submerged in the liquid.

          Simmer the Dish: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Make sure to check occasionally and stir if needed.

            Fluff & Garnish: Once fully cooked, remove the pot from heat. Fluff the rice with a fork and let it sit, covered, for an additional 5 minutes. Garnish with fresh cilantro before serving.
