Ingredients

12 oz (340 g) pasta (penne or fusilli work great)

2 cups vegetable broth

1 cup heavy cream

1 cup pesto sauce (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions

Sauté Garlic: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute, or until fragrant.

Add Ingredients: Pour in the vegetable broth and heavy cream. Stir well to combine. Then, add the uncooked pasta, ensuring it's submerged in the liquid.

Cook Pasta: Bring the mixture to a boil. Once boiling, reduce the heat to medium-low, cover with a lid, and let it simmer for 10-12 minutes. Stir occasionally to prevent the pasta from sticking.

Add Pesto and Veggies: After the pasta is cooked al dente, stir in the pesto sauce, cherry tomatoes, and fresh spinach. Let it cook for an additional 3 minutes until the spinach wilts.

Add Cheese: Gradually mix in the shredded mozzarella and grated Parmesan cheese until melted and the pasta is creamy. Season with salt and pepper to taste.

Serve: Remove from heat, garnish with fresh basil leaves if desired, and serve warm. Enjoy your delicious one-pot meal!
