4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Onions and Garlic: In the same skillet, add diced onions and sauté for about 3-4 minutes until translucent. Then, add minced garlic and cook for another 1 minute, stirring frequently to avoid burning.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sauté for 5-6 minutes until they are tender and have released their juices.

          Create the Sauce: Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Allow it to simmer for about 3 minutes. Then stir in the heavy cream, thyme, rosemary, and Parmesan cheese. Let the sauce simmer for an additional 3-4 minutes until it thickens slightly.

            Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Allow to cook for an additional 2-3 minutes to reheat the chicken and meld the flavors together.

              Garnish: Remove from heat, garnish with freshly chopped parsley, and serve hot.
