Orange Glazed Tofu Stir-Fry

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cups broccoli florets

1 cup snap peas

4 green onions, chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1/2 cup freshly squeezed orange juice

Zest of 1 orange

3 tablespoons soy sauce

2 tablespoons maple syrup or honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

Sesame seeds, for garnish

Fresh cilantro, for garnish

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Cut it into bite-sized cubes and coat them in cornstarch, ensuring an even coating.

    Make the Orange Glaze: In a medium bowl, whisk together the orange juice, orange zest, soy sauce, maple syrup (or honey), rice vinegar, and sesame oil. Set aside.

      Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for about 5-7 minutes, turning occasionally until golden and crispy on all sides. Remove the tofu from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

          Add Aromatics: Stir in the minced garlic and grated ginger, and cook for an additional 1-2 minutes until fragrant.

            Combine Tofu and Glaze: Return the crispy tofu to the skillet and pour the orange glaze over the mixture. Toss everything well to coat and allow the sauce to simmer for about 2-3 minutes, until slightly thickened.

              Finish and Serve: Once the dish is well combined, remove from heat. Garnish with chopped green onions, sesame seeds, and fresh cilantro. Serve warm over steamed rice or noodles!
