16 large cremini or white mushrooms, stems removed

2 cups fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

3 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup breadcrumbs (preferably Panko for extra crunch)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Mushroom Caps: Gently clean the mushroom caps with a damp cloth and place them on the prepared baking sheet, stem side up.

      Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, approximately 3-4 minutes. Season with salt, pepper, and red pepper flakes (if using).

        Make the Filling: In a large mixing bowl, combine the sautéed spinach and garlic, ricotta cheese, Parmesan cheese, and half of the mozzarella cheese. Mix until well combined. Adjust seasoning as needed with additional salt and pepper.

          Stuff the Mushrooms: Spoon a generous amount of the spinach cheese mixture into each mushroom cap, pressing down slightly to ensure the filling is secure.

            Top with Breadcrumbs and Cheese: Sprinkle the remaining shredded mozzarella cheese and breadcrumbs evenly over the stuffed mushrooms.
