2 cups fresh peaches, diced (about 3 medium peaches)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional, for a hint of heat)

1 tablespoon olive oil

Salt and black pepper to taste

1/4 cup fresh basil leaves, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the pasta until al dente, according to package instructions. Drain and set aside.

Prepare the Peach Mixture: In a large mixing bowl, combine the diced peaches, ricotta cheese, 1/2 cup of mozzarella cheese, spinach, garlic powder, onion powder, and red pepper flakes (if using). Season with salt and black pepper to taste.

Combine Pasta and Peaches: Gently fold the cooked pasta into the peach mixture until well combined.

Assemble the Bake: In a greased baking dish (approximately 9x13 inches), pour the pasta and peach mixture. Spread it evenly. Sprinkle the remaining mozzarella cheese and Parmesan cheese on top.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbling and golden on top.

Garnish and Serve: Once baked, remove from the oven and let it cool for 5 minutes. Garnish with freshly chopped basil leaves before serving.
