Peach Ricotta Grilled Flatbread

2 medium ripe peaches, sliced

1 cup ricotta cheese

1 tablespoon honey (plus extra for drizzling)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

1 tablespoon olive oil (plus extra for brushing)

4 pieces of store-bought or homemade flatbread

Fresh mint leaves, for garnish

Sea salt, for finishing

Optional: balsamic glaze for drizzling

Prepare the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and lemon juice. Mix until smooth and well-combined. Set aside.

    Grill the Peaches: Preheat your grill to medium heat. In a bowl, toss the peach slices with olive oil to lightly coat them. Once the grill is hot, place the peaches on the grill grates and cook for about 2-3 minutes on each side until they have good grill marks and are slightly softened. Remove from the grill and let cool a bit.

      Grill the Flatbreads: Lightly brush both sides of the flatbreads with olive oil. Place them on the grill for about 2 minutes, flipping once, until they are warm and have nice grill marks.

        Assemble the Flatbreads: Spread a generous layer of the ricotta mixture over each grilled flatbread. Top with the grilled peach slices.
