4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

2 ripe peaches, diced (about 1 cup)

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice level)

½ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

8 small corn or flour tortillas

1 cup crumbled feta cheese (optional)

Fresh lime wedges (optional)

Instructions
 

Prepare the Chicken Marinade:

    In a bowl, whisk together the olive oil, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice. Add the chicken breasts, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Make the Peach Salsa:

        In a mixing bowl, combine the diced peaches, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste, and mix well. Allow the salsa to sit for at least 10 minutes so the flavors can meld together.
