Peanut Butter Banana Oat Muffins

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour)

1/2 cup brown sugar (packed)

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

2 ripe bananas, mashed

1/2 cup creamy peanut butter

1/2 cup almond milk (or any milk of choice)

1 large egg

1 teaspoon vanilla extract

1/4 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, combine rolled oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon. Mix thoroughly until well combined.

      In a separate bowl, whisk together the mashed bananas, peanut butter, almond milk, egg, and vanilla extract until smooth and creamy.

        Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine. If using, stir in the chocolate chips and chopped walnuts.

          Scoop the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

            Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

              Remove from the oven and let the muffins cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

                Enjoy your muffins warm or at room temperature. They can also be stored in an airtight container for up to 4 days or frozen for longer storage.
