1 lb ground chicken

1 cup fresh mozzarella cheese, sliced

1 cup baby spinach or arugula

1/4 cup sun-dried tomatoes, chopped (optional)

1/4 cup fresh basil pesto

2 tablespoons olive oil

1 tablespoon lemon juice
