2 cups rolled oats

1/2 cup shredded coconut (unsweetened)

1/2 cup brown sugar or coconut sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

2 cups coconut milk (or any milk of choice)

2 large eggs

1 teaspoon vanilla extract

1 cup crushed pineapple (drained, if canned)

1/2 cup chopped walnuts or pecans (optional)

Fresh pineapple and toasted coconut for topping (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, brown sugar, baking powder, salt, and cinnamon. Stir until well mixed.

      Whisk Wet Ingredients: In another bowl, whisk together the coconut milk, eggs, and vanilla extract. Make sure it's well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until everything is fully incorporated. Add the crushed pineapple and nuts (if using), and mix gently.

          Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.

            Bake: Bake in the preheated oven for about 30-35 minutes or until the top is golden and the oatmeal is set. A toothpick inserted in the center should come out clean.

              Cool and Serve: Let the baked oatmeal cool for a few minutes before slicing. Serve warm, topped with fresh pineapple chunks and a sprinkle of toasted coconut, if desired.
