Pineapple Pepper Chicken Pockets

1 lb (450g) boneless, skinless chicken breast, diced

1 cup fresh pineapple, diced (you can use canned if necessary)

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, diced

3 cloves garlic, minced

2 tbsp soy sauce

1 tbsp honey

1 tbsp olive oil

1 tsp ground ginger

1/2 tsp black pepper

1 tsp salt

1 tbsp lime juice

4 large pita breads or pockets

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the diced chicken, soy sauce, honey, olive oil, ginger, black pepper, and salt. Mix well and let it marinate for at least 30 minutes. (For extra flavor, you can marinate it overnight in the refrigerator).

    Sauté the Vegetables: Heat a large skillet over medium heat. Add the diced red onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic, red and green bell peppers, and cook for an additional 3-4 minutes until they soften.

      Cook the Chicken: Push the sautéed vegetables to the side of the skillet and add the marinated chicken. Cook until the chicken is nicely cooked through, about 7-8 minutes, stirring occasionally. Then add the fresh pineapple and lime juice, letting it cook for another 2-3 minutes until the pineapple is warmed through.

        Prepare the Pita Pockets: While the chicken and vegetables are cooking, warm the pita bread or pockets in a dry skillet or microwave. This will make them more pliable and easier to fill.

          Assemble the Pockets: Carefully open each pita pocket. Spoon the pineapple pepper chicken mixture into each pocket, filling generously.
