Pineapple Salsa Chicken

4 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely diced

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons honey

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Prepare the Salsa: In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro. Drizzle with lime juice and honey, then season with salt and pepper. Gently toss to combine, and set aside to let the flavors meld.

    Season the Chicken: Season the chicken breasts on both sides with ground cumin, garlic powder, salt, and pepper.

      Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.

        Add the Salsa: When the chicken is nearly done, spoon the pineapple salsa over the chicken in the skillet and allow it to cook together for an additional 2-3 minutes. This will warm up the salsa and infuse the chicken with tropical flavors.
