2 ripe bananas, mashed

1 cup pumpkin puree (canned or homemade)

2 cups rolled oats

1 ½ cups milk (dairy or non-dairy)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, milk, maple syrup, and vanilla extract. Whisk until smooth and well combined.

      Add Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, nutmeg, baking powder, and salt. Stir until evenly combined.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped walnuts or pecans and chocolate chips.

          Fill Muffin Tin: Divide the oatmeal mixture evenly among the muffin cups, filling each about 3/4 full. The mixture will not rise significantly, so it’s okay if it’s up to the top.

            Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the oatmeal cups are set and the tops are slightly golden.
