1 cup rolled oats

1 cup almond flour (or whole wheat flour)

1/2 cup pumpkin puree (canned or fresh)

1/3 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chocolate chips (dark or semi-sweet)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well to ensure the ingredients are evenly distributed.

      Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, maple syrup (or honey), melted coconut oil, and vanilla extract until smooth and well combined.
