1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp ground cloves

1/2 cup granulated sugar

1/4 cup brown sugar

1/3 cup unsweetened pumpkin puree

1/2 cup brewed coffee (cooled)

1/4 cup maple syrup

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

Optional: 1/2 cup chopped nuts (walnuts or pecans), chocolate chips, or dried cranberries

Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

    Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Make sure everything is well combined.

      Combine wet ingredients: In another bowl, mix the granulated sugar, brown sugar, pumpkin puree, cooled coffee, maple syrup, vegetable oil, egg, and vanilla extract until smooth.

        Combine mixtures: Slowly fold the wet ingredients into the dry ingredients using a spatula. Be careful not to overmix; a few lumps are okay. If desired, gently fold in the optional nuts, chocolate chips, or dried cranberries at this point.
