Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1 cup canned pure pumpkin (not pumpkin pie filling)

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup semisweet chocolate chips

Optional: 1/4 cup chopped nuts (e.g., walnuts or pecans)

Instructions

Preheat your Oven:

Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

      Mix Dry Ingredients:

In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt until evenly combined.

          Combine Wet Ingredients:

In another bowl, mix the canned pumpkin, brown sugar, granulated sugar, oil, eggs, and vanilla extract. Whisk until smooth and the ingredients are well combined.

              Combine Dry and Wet Mixtures:

Gradually fold the wet mixture into the dry ingredients using a spatula or wooden spoon. Stir until just combined; be careful not to overmix.

                  Add Chocolate Chips:

Gently fold in the semisweet chocolate chips and optional chopped nuts.

                      Fill the Muffin Tin:

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

                          Bake:

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                              Cool:

Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

                                  Serve:

Enjoy your delicious Pumpkin Spice Chocolate Chip Muffins warm or at room temperature! These muffins pair perfectly with a warm cup of coffee or tea.
