8 slices of white bread (crusts removed)

1 cup canned pumpkin puree

2 large eggs

1/2 cup milk (or dairy-free alternative)

1/4 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (plus extra for dusting)

4 tablespoons butter (for frying)

Instructions
 

Prepare the Filling: In a medium bowl, combine the pumpkin puree, brown sugar, eggs, milk, vanilla extract, and pumpkin pie spice. Mix well until smooth and creamy.

    Flatten the Bread: Using a rolling pin, gently roll out each slice of bread until flat. This will help when you roll them up.

      Assemble the Roll-Ups: Take about a tablespoon of the pumpkin mixture and spread it onto one end of a flattened slice of bread. Roll it up tightly, starting from the end with the filling. Repeat this with all slices.

        Heat the Pan: In a large skillet, melt 2 tablespoons of butter over medium heat.
