Ingredients

For the Beef:

1 lb ground beef (80/20 for optimal flavor and juiciness)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons fresh lime juice

For the Fresh Salsa:

2 medium ripe tomatoes, diced

1/2 small red onion, finely chopped

1 medium jalapeño, seeded and minced (adjust to taste)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

2 tablespoons fresh lime juice

Salt, to taste

For Assembly:

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheese (Mexican blend or cheddar)

Sour cream or Greek yogurt, for topping (optional)

Extra lime wedges, for serving

Instructions

Prepare the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef. Break up the beef with a wooden spoon and cook until browned, about 5-7 minutes.

Season the Beef: Drain excess grease if necessary. Stir in the garlic powder, onion powder, smoked paprika, cumin, chili powder, salt, and pepper. Cook for another minute until spices are fragrant. Pour in fresh lime juice, mix well, and remove from heat.

Make the Salsa: In a medium bowl, combine the diced tomatoes, red onion, jalapeño, cilantro, olive oil, and lime juice. Mix well and season with salt to taste. Let it sit for 5-10 minutes to allow the flavors to meld.

Warm the Tortillas: While the salsa is resting, heat a clean skillet over medium-high heat. Warm each tortilla for about 30 seconds on each side, or until pliable and slightly charred.

Assemble the Tacos: On each warmed tortilla, layer a generous scoop of the seasoned beef, followed by a handful of shredded lettuce, a sprinkle of cheese, and a dollop of sour cream or Greek yogurt, if desired. Spoon the fresh salsa over the top.

Serve: Serve the tacos with extra lime wedges on the side for squeezing. Enjoy your flavorful, quick beef tacos with fresh salsa!
