2 cups cooked chicken breast, shredded

1 can black beans, drained and rinsed

1 cup corn, frozen or canned

1 cup diced bell peppers (mix of colors for a festive touch)

1 tsp taco seasoning

8 flour tortillas (8-inch size)

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup salsa

1/2 cup sour cream (for serving, optional)

Fresh cilantro, chopped (for garnish, optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the chicken mixture: In a large bowl, combine the shredded chicken, black beans, corn, bell peppers, and taco seasoning. Mix until well incorporated.

      Layer tortillas: In a greased 9x13 inch baking dish, place 4 tortillas on the bottom, slightly overlapping them to cover the base.

        Add chicken mixture: Spread half of the chicken mixture evenly over the tortillas. Sprinkle with half of the cheddar and Monterey Jack cheeses.

          Repeat layers: Add another layer of tortillas (the remaining 4), followed by the rest of the chicken mixture, and finish with the remaining cheeses on top.

            Top with salsa: Pour the salsa evenly over the top layer of cheese.

              Bake the casserole: Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
