1 lb (450g) chicken breast, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons lemon juice (freshly squeezed)

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 medium bell pepper, cut into 1-inch pieces (optional for color)

1 medium red onion, cut into wedges (optional for sweetness)

Fresh parsley, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the cubed chicken and mix well. Let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Prepare Skewers: If using wooden skewers, soak them in water for 15 minutes to prevent burning. Preheat your grill or grill pan over medium heat.

      Assemble the Skewers: Thread the marinated chicken onto the skewers, alternating with pieces of bell pepper and onion if using, for added flavor and color.
