Ingredients

1 package of phyllo dough (about 16 oz), thawed

2 cups fresh or frozen cranberries

1 cup granulated sugar (adjust based on tartness of cranberries)

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon lemon juice

4 tablespoons unsalted butter, melted

Powdered sugar, for dusting (optional)

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.

Prepare the Filling: In a medium saucepan over medium heat, combine the cranberries, granulated sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Stir until the cranberries start to pop and thicken, about 5-7 minutes. Once the mixture is thickened and bubbly, remove it from the heat and let it cool slightly.

Prepare the Phyllo Dough: Carefully unroll the phyllo dough. Keep it covered with a damp cloth to prevent it from drying out. Stack 4 sheets of phyllo dough together, brushing each layer lightly with melted butter before adding the next. Repeat the process until you have 3 stacks.

Assemble the Strudel: Spoon the cranberry filling evenly along one edge of each phyllo stack, leaving a small border. Fold in the sides and then roll the phyllo over the filling to form a log shape. Place the seam side down on the prepared baking tray.

Add the Egg Wash: Brush the top of each strudel with the beaten egg. This will give it a beautiful golden color when baked.

Bake: Place the strudels in the preheated oven and bake for 25-30 minutes or until they are golden brown and crispy.

Cool and Serve: Once baked, let the strudels cool for a few minutes. Dust with powdered sugar before serving if desired, slice, and enjoy the delightful combination of flaky crust and tart cranberry filling!
