1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or fresh)

1 cup diced tomatoes (canned or fresh)

2 cups cooked rice (white, brown, or cauliflower rice)

1 cup shredded lettuce

1 cup diced avocado

1/2 cup salsa

1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Fresh cilantro, for garnish

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
