Quick Teriyaki Chicken and Broccoli Bowls

Ingredients
  

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

2 cups broccoli florets (fresh or frozen)

1 cup jasmine rice (or brown rice)

1/4 cup soy sauce (low sodium recommended)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic (minced)

1 teaspoon fresh ginger (grated)

2 tablespoons cornstarch

1 tablespoon water

2 tablespoons water (for steaming broccoli)

Optional toppings: sesame seeds, sliced green onions, and/or red pepper flakes

Instructions
 

Cook the Rice:

    - Rinse the jasmine rice under cold water until the water runs clear.

      - In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt.

        - Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes (or according to package instructions). Remove from heat and let it sit covered for 5 minutes.

          Prepare the Teriyaki Sauce:

            - In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Set aside.

              Cook the Chicken:

                - In a large skillet or wok over medium-high heat, add a drizzle of oil and once hot, add the chicken pieces.

                  - Stir-fry the chicken until browned and cooked through (about 5-7 minutes).

                    Add Broccoli and Sauce:

                      - Once the chicken is cooked, push the chicken to the side of the skillet and add the broccoli florets.

                        - Pour 2 tablespoons of water over the broccoli, cover the skillet with a lid, and let the broccoli steam for about 3-4 minutes until bright green and tender.

                          Thicken the Sauce:

                            - In a small bowl, mix the cornstarch with 1 tablespoon of water to create a slurry.

                              - Pour the teriyaki sauce mixture into the skillet with the chicken and broccoli.

                                - Add the cornstarch slurry and stir well, allowing the sauce to simmer and thicken for 2-3 minutes.

                                  Assemble the Bowls:

                                    - Fluff the cooked rice with a fork and divide it among serving bowls.

                                      - Top with the teriyaki chicken and broccoli mixture.

                                        Garnish:

                                          - Sprinkle with sesame seeds, sliced green onions, and a pinch of red pepper flakes if desired.
