Quick Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 ½ cups canned diced tomatoes (with juice)

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded mozzarella cheese

Olive oil (for cooking)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove seeds and membranes. Drizzle a little olive oil inside and place them standing up in a baking dish. Set aside.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Add chopped onion and sauté until translucent (about 3-4 minutes). Then, add minced garlic and cook for another minute until fragrant.

        Cook the Turkey: Increase the heat to medium-high. Add the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

          Combine Ingredients: Stir in the chopped spinach, cooked quinoa (or rice), canned diced tomatoes (with juice), Italian seasoning, paprika, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts down.

            Stuff the Peppers: Carefully spoon the turkey and spinach mixture into each prepared bell pepper. Pack the filling tightly, then sprinkle the shredded mozzarella cheese evenly over the tops.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired. Serve hot and enjoy your delicious Quick Turkey and Spinach Stuffed Peppers!
