Quick Turkey Tacos with Fresh Avocado Salsa

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1 cup canned black beans, rinsed and drained

Salt and pepper, to taste

8 small corn tortillas

1 ripe avocado, diced

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: shredded cheese, sour cream, sliced jalapeños

Instructions
 

Prepare the Turkey Filling:

    - In a large skillet, heat the olive oil over medium heat.

      - Add the chopped onion and sauté until translucent, about 3-4 minutes.

        - Stir in the minced garlic and cook for an additional 1 minute until fragrant.

          - Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

            - Mix in the taco seasoning, black beans, and season with salt and pepper. Cook for another 2-3 minutes until heated through. Remove from heat.

              Make the Fresh Avocado Salsa:

                - In a medium bowl, combine the diced avocado, diced tomato, chopped cilantro, and lime juice. Gently toss to combine and season with salt to taste. Set aside.

                  Warm the Tortillas:

                    - In a dry skillet over medium-high heat, warm the corn tortillas for about 30 seconds on each side until they are pliable. Keep them warm by wrapping them in a clean kitchen towel.
