2 cups cooked jasmine rice (preferably day-old)

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs, lightly beaten

3 green onions, chopped (white and green parts separated)

3 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (or vegetarian alternative)

1 teaspoon fresh ginger, minced

Salt and black pepper to taste

Optional: Red pepper flakes for heat

Optional: Fresh cilantro for garnish

Prepare the Rice: If you haven't already, cook the jasmine rice and let it cool completely, ideally overnight in the refrigerator. Cold rice prevents clumping and helps achieve the right texture.

    Heat Oils: In a large wok or non-stick skillet, heat the vegetable oil over medium-high heat. Once heated, add the sesame oil for added flavor.

      Sauté Aromatics: Add the chopped onion and garlic to the pan. Sauté for 2-3 minutes until the onions become translucent and fragrant.

        Scramble Eggs: Push the onion and garlic mixture to one side of the pan. Pour the beaten eggs into the other side and scramble them until fully cooked. Then, mix them with the onion and garlic.

          Add Veggies: Stir in the mixed vegetables and fresh ginger. Cook for another 3-4 minutes until the vegetables are tender but still vibrant in color.

            Incorporate Rice: Add the cold, cooked jasmine rice to the pan. Using a spatula, break apart any clumps and stir everything together thoroughly.

              Flavor It Up: Drizzle the soy sauce and oyster sauce over the rice mixture. Add chopped green onions (white parts) and stir to combine. Cook for an additional 2-3 minutes, allowing the rice to soak up the sauces.

                Season: Taste and season with salt, black pepper, and optional red pepper flakes for a bit of heat. Stir well.
